Millionaire's Poke Cake

 Sorry it's been a bit quiet around here this week.  We've had a busy week!  We moved back into our bedroom, and we've been working out our budget for the next few months. I also stocked up our freezer yesterday with some healthy, homemade meals that can just be popped in the slow cooker!

We had some friends over last night, and I used them as guinea pigs for a new recipe....

I call it Millionaire's Poke Cake!
 
Ingredients:
  • 1 Vanilla Cake Mix, prepared according to instructions on the box
  • 1 cup semi-sweet chocolate chips
  • 1 1/2 cup caramel
  • 1 1/2 cup whipping cream 
  • 1 package shortbread cookies
  • Chocolate Sauce for drizzling

Method:
  1. Prepare the cake mix according to the package instructions.
  2. Fold in the chocolate chips, and bake the cake until a skewer inserted in the middle comes out clean.
  3. While the cake is still slightly warm, poke holes all over the cake with the handle of a wooden spoon.
  4.  Spread the caramel evenly over the top of the cake, and refrigerate for about 30 minutes.
  5. Whip the cream, and refrigerate.
  6. Spread the whipped cream over the top of the cake.
  7. Crumble the shortbread cookies, and sprinkle them over the top of the cake.
  8. Drizzle with chocolate sauce.
  9. Refrigerate about another 30 minutes before serving.
This cake is SUPER rich, so you don't need a lot!  It was pretty easy to make....hope you'll try it and enjoy it as much as we did!
